This September, The Amber Terrace at The Leela Palace Jaipur welcomes Fireback, EHV International’s celebrated Thai restaurant, for two exclusive evenings of authentic Thai cuisine, flame-led cooking and contemporary cocktails.

Fireback’s culinary direction is shaped by acclaimed Michelin-starred chef David Thompson, one of the world’s foremost authorities on Thai cuisine. His distinctive approach celebrates the depth, balance and complexity of authentic Thai cooking, bringing together traditional techniques, bold flavours and a deep respect for Thai culinary heritage.

Fireback’s menu celebrates the depth and diversity of Thai cooking, with authentic curries and stir-fries at its heart, complemented by vibrant small plates, grills and skewers. The cuisine balances the essential contrasts of Thai flavour — heat, acidity, sweetness, herbs and spice — while fire-led cooking brings depth and character to the plate.

At The Amber Terrace, this culinary journey meets the venue’s distinctive Root to Fruit philosophy. Thai ingredients such as lemongrass, chilli, kaffir lime and tamarind inspire an expressive cocktail experience, creating thoughtful pairings that complement the intensity and freshness of Fireback’s cuisine.
