The fusion of bountiful ingredients, traditional cooking techniques, and iconic dishes creates a culinary legacy that is both diverse and captivating. The local cuisine offers a variety of vegetarian and non-vegetarian dishes made with fresh seafood, poultry, and red meat with rice as a typical accompaniment. Kerala's cuisine regularly incorporates black pepper, cardamom, cloves, cinnamon, and ginger into its recipes due to the state's prominence as a spice producer. Locals frequently utilise coconut since it is readily available and has a wealth of health advantages to make delectable foods.  Indulge in these flavours and more as you embark on a unique yet traditional culinary journey.

A Culinary Voyage through Kerala’s Cuisine

A Culinary Voyage through Kerala's Cuisine

Travancore Cuisine:  Originating from the Southern region of Kerala, Travancore's culinary heritage is a testament to the region's rich history and cultural influences. The cuisine's exquisite flavors are meticulously crafted, blending fragrant spices like black pepper, cardamom, and cinnamon, with the freshness of locally sourced ingredients. This cuisine encapsulates the essence of regal indulgence, where each dish is a work of art. It is a testament to the region's culinary mastery, blending tradition, innovation, and a deep-rooted connection to the land. Exploring Travancore cuisine offers a tantalizing glimpse into the rich flavors and cultural heritage of this enchanting region.

Syrian Cuisine: For centuries, the allure of spices has attracted explorers to the southern states of India. In AD 52, legend holds that Thomas the Apostle established Syrian Christians, also known as Suriani, upon arriving on the Kerala coast. Influenced by diverse cultures, Suriani cuisine blends fresh local ingredients with spices like pepper, cardamom, star anise, fennel, and clove. Suriani family traditions evoke the aromas of wood smoke, nutmeg, and pepper in the old villas of Kerala. The traditional kitchen features six or more wood-fired stoves—one for kanji (rice gruel), another for olathiatu (stir fry), and the smallest for cooking rice pancakes on an appa chatti (griddle). While Suriani cuisine leans towards non-vegetarian, it includes delightful vegetarian options like thorans (side dishes), steamed plantains, and freshly ground chutneys accompanying every meal.

Malabar Cuisine: Malabar cuisine, originating from the Malabar region in the Indian state of Kerala, is a culinary treasure trove that captivates with its unique blend of flavors, aromatic spices, and a rich maritime heritage. Malabar cuisine owes much of its allure to the vibrant array of spices that are generously used in its dishes. From the bold heat of black pepper and the warmth of cinnamon to the aromatic essence of cardamom and cloves, the spices of Malabar infuse each dish with a depth of flavor and complexity.
